This is a jewel of a book. The recipes are accessible and oh so tasty. Vegetables have never tasted or looked so good. Shaw begins by helping you to get acquainted with a vegetarian diet and then leads you on the path to healty, vegetarian eating. Even for those who aren't dedicated vegetarians (myself included) this is a fabulous guide to eating healthy, well-blanaced meals and doing the unthinkable with all sorts of vegetables. This is one of my favorite vegetarian cookbooks. If you like this book make sure to check out any titles by Deborah Madison--They are fabulous.
